Sommelier – All Levels – Join Founding Team in Dempsey

About the role

We are launching a new restaurant in Dempsey and are building a founding sommelier team. Whether you are an emerging talent or an experienced wine leader, you will help shape a world‑class beverage program and create memorable dining experiences for our guests.

Key responsibilities

• Deliver exceptional wine and beverage service, providing tailored recommendations and professional presentation, opening, decanting and serving.
• Maintain deep knowledge of the wine list, producers, regions, vintages and styles, and share this knowledge with guests and staff.
• Assist with receiving, storing, organising and rotating wine inventory, and support regular stock counts and audits.
• Collaborate closely with restaurant management and service teams to uphold a high‑performing, hospitality‑focused culture.
• For senior roles (Head, Assistant Head, Sommelier): mentor junior staff, support daily beverage operations, assist with purchasing, supplier relationships and wine‑list development, and drive sales performance.
• Head Sommelier specific duties: lead the overall wine program, curate the wine list, manage budgets and supplier partnerships, develop pairings and bespoke experiences, and oversee recruitment and performance management for the sommelier team.

Required profile

• Fluent Mandarin to serve a diverse clientele.
• Passion for wine, hospitality and guest service.
• Previous experience in a restaurant, luxury hospitality or fine‑dining environment is preferred.
• CMS qualification or an equivalent wine certification.
