Senior Omakase Chef

About the role

We are a well‑established Japanese fine‑dining restaurant in Singapore seeking a Senior Omakase Chef to lead the execution of our multi‑course tasting menus. Working closely with the Head Chef, you will ensure every dish meets the highest standards of taste, presentation, and consistency.

Key responsibilities

• Execute multi‑course omakase menus with precision and consistency.
• Prepare and present premium sushi, sashimi, and seasonal seafood.
• Demonstrate expert fish handling, filleting, and knife techniques.
• Cook traditional Japanese dishes such as chawanmushi, grilled and simmered items, and clear soups.
• Handle premium ingredients including Wagyu and seasonal produce using appropriate techniques.
• Maintain high standards of food hygiene, kitchen cleanliness, and organization.
• Assist with mise en place, seasonal menu changes, and quality control of incoming ingredients.
• Guide and support junior kitchen staff and coordinate with the service team for timely course delivery.

Required profile

• Approximately 10 years of professional experience in high‑end Japanese cuisine.
• Proven background in omakase, sushi, kappo or kaiseki establishments.
• Strong attention to detail, discipline, and ability to thrive in a demanding fine‑dining environment.
• Japanese language proficiency (spoken) to communicate with the Head Chef.
