Sommelier – Heritage Restaurant at Raffles Hotel

About the role

The Sommelier will deliver friendly and efficient wine service for guests at 1887 by André, a heritage gastronomy restaurant within Raffles Hotel Singapore. The role supports the Head Sommelier in daily operations and ensures a memorable dining experience that blends historic elegance with modern innovation.

Key responsibilities

• Present wine options, provide advice, and take wine orders.
• Serve wine correctly (proper glassware, temperature, condition) and manage aperitif, wine by the glass, and bottle sales.
• Upsell wine and after‑meal service while maintaining accuracy and timeliness.
• Prepare mise‑en‑place, retrieve wine stock, arrange cellars, and handle wine requisitions.
• Maintain cleanliness and safety in wine and service areas.
• Coordinate with Culinary, Catering Sales, and Service teams for seamless operations.
• Perform any additional duties assigned by the Head of Department.

Required profile

• Friendly, courteous demeanor with a focus on guest dining experience.
• Ability to use guest names appropriately and personalize service.
• Adopts the Heartist® approach to make guests feel welcome, heart‑warmed, incredible, and belonging.
• Team player who works collaboratively with the Food & Beverage service team.
