Director of Food & Beverage

About the role

The Director of Food & Beverage will lead all culinary and beverage operations at Raffles Sentosa Singapore, a luxury all‑villa resort on Sentosa Island. Reporting to the Hotel Manager, you will ensure the highest standards of food quality, cost efficiency, hygiene, and guest experience across five dining venues and banquet facilities.

Key responsibilities

• Oversee food quality, presentation, freshness and temperature across all outlets.
• Guide menu development, new dish creation and regular tasting sessions.
• Control food and non‑food costs, manage budgets, and drive gross profit targets.
• Ensure compliance with HACCP, local sanitation laws and internal hygiene standards.
• Conduct weekly kitchen walk‑throughs with the Hygiene Manager and address any findings.
• Lead strategic planning, revenue generation initiatives and service excellence programs.

Required profile

• Proven senior leadership experience in food & beverage operations within luxury hotels or resorts.
• Strong track record of cost control, budgeting and profit management.
• Deep knowledge of food safety, HACCP and local regulatory requirements.
• Ability to innovate menus, drive guest satisfaction and uphold brand standards.
