Junior Sous Chef – F&B (Wakuda)

About the role

Marina Bay Sands is looking for a motivated Junior Sous Chef to join the Wakuda outlet. You will work closely with the Chef de Cuisine and Sous Chef to ensure smooth daily kitchen operations and uphold the resort’s high culinary standards.

Key responsibilities

• Assist the Chef de Cuisine and Sous Chef in managing daily kitchen activities.
• Train Chef de Partie and Commis staff on kitchen standards, hygiene and food preparation.
• Follow standard recipes, presentation guidelines and portion control.
• Manage stock, place orders and conduct goods receiving checks to ensure quality.
• Apply food safety and hygiene policies, including colour‑labelling, temperature recording and FIFO practices.
• Oversee the step‑by‑step food production process from delivery to guest plate.
• Ensure safe use of kitchen equipment and provide guidance to culinary colleagues.
• Estimate food consumption, schedule purchases and minimise waste.
• Foster a cooperative work environment and support staff morale.

Required profile

• Degree, diploma or certification in Culinary Arts or Management.
• Minimum 5 years of supervisory experience in a 4‑ or 5‑star hotel or quality restaurant.
• Fluent English; additional languages are a plus.
• Willingness to work shifts and maintain a professional appearance.
