Chef de Partie – Specialty Italian Restaurant

About the role

As a Chef de Partie in the specialty Italian restaurant at Hilton Singapore Orchard, you will prepare and cook dishes according to standard recipes, assist the Sous Chef, and contribute to product development while ensuring high standards of hygiene and quality.

Key responsibilities

• Prepare food for guests efficiently, economically and hygienically following standard recipes.
• Assist the Sous Chef in daily kitchen operations and maintain high standards of preparation and presentation.
• Plan, prepare and implement high‑quality food and beverage products across all restaurant areas.
• Maintain cleanliness, hygiene and HACCP standards throughout the kitchen.
• Manage inventory, monitor portion control, costing and food quality.
• Support off‑site events and collaborate with the Stewarding department to minimise waste.

Required profile

• High school diploma or equivalent culinary qualification.
• Minimum 3 years experience in a 5‑star hotel or high‑end restaurant.
• Valid Food Hygiene certificate.
• Ability to work under pressure in a hot, moist kitchen environment.
• Good leadership and training abilities.

Required skills

• Seafood and meat processing techniques.
• Steaming, baking, braising and grilling methods.
• HACCP knowledge and implementation.
• Recipe adherence, portion control and costing.
• Inventory management and stock taking.
