Director of Food & Beverage

About the role

The Director of Food & Beverage will lead all culinary and beverage operations at Raffles Sentosa Singapore, ensuring the highest standards of food quality, hygiene, and guest experience across multiple dining venues. Reporting to the Hotel Manager, the role combines strategic planning, cost control, and team leadership to drive revenue and uphold the brand’s reputation for excellence.

Key responsibilities

• Maintain and continuously improve food quality, presentation, and temperature across restaurants and banquet services.
• Control overall food and non‑food costs, optimise purchasing, and ensure gross profit targets are met.
• Ensure kitchen operations comply with HACCP, local food safety regulations, and regular sanitation audits.
• Drive service excellence by introducing new dining concepts, handling guest feedback, and enhancing the overall guest experience.
• Lead and develop a diverse F&B team, aligning operations with the hotel’s Gross Operating Profit, brand standards, and sustainability initiatives.

Required profile

• Degree or Diploma in Hospitality or a related field.
• Minimum 10 years of progressive F&B management experience in luxury hotels.

Required skills

• HACCP compliance and food safety expertise.
• Food cost control and budgeting proficiency.
