Executive Chef

About the role

We are looking for an Executive Chef to lead our kitchen operations at FAST TRACK PTE. LTD. in Singapore. The role combines menu creation, staff management and strict adherence to food safety standards to deliver authentic South & North Indian and Indian‑fusion dishes.

Key responsibilities

• Control and direct the food preparation process and related activities.
• Design and construct menus with new or existing culinary creations, ensuring variety and quality.
• Approve and polish dishes before they reach the customer.
• Plan orders of equipment and ingredients, manage shortages and arrange repairs.
• Prepare a variety of naan breads, kebabs and Indian sweets, including Bengali specialties.
• Hire, train, and manage kitchen staff, oversee workloads and compensation.
• Maintain compliance with nutrition, sanitation, and safety regulations.
• Operate and maintain the tandoor oven in a fast‑paced environment.
• Develop tasting menus for events and create cross‑marketing strategies such as drink pairings.
• Monitor stock levels, ensure proper labeling, rotation, and timely restocking.

Required profile

• Proven experience preparing South & North Indian cuisine and Indian‑fusion dishes.
• Prior experience with Indian and Bengali sweets and savouries.
• Ability to manage and train a kitchen team with minimal supervision.
• Strong knowledge of food safety, sanitation and nutrition standards.
• Capability to work under pressure and meet tight deadlines.
• Independent, team‑oriented mindset with a focus on quality.
