Restaurant Manager – Food & Beverage Operations

About the role

The Restaurant Manager will support the Assistant General Manager and General Manager in delivering exceptional dining experiences at Milos, part of Marina Bay Sands. You will lead a team of Captains, Cashiers, Hosts and Service Attendants, ensuring smooth operations, high service standards and achievement of financial targets.

Key responsibilities

• Assist AGM and GM in planning, coordinating and managing daily restaurant operations.
• Lead and develop a team of Captains, Cashiers, Hosts and Service Attendants.
• Formulate and implement operating procedures, standards and staffing plans.
• Monitor cash handling, wastage, labor productivity and compliance with accounting standards.
• Inspect table set‑ups, cleanliness, food portions and menu availability to meet hotel standards.
• Manage reservations, special requests and pre‑shift briefings.
• Handle guest comments, requests and complaints promptly and professionally.
• Supervise, mentor, train, schedule and evaluate staff; conduct performance reviews.
• Support financial, service and operational goals through proactive management.

Required profile

• Proven experience in restaurant or food‑and‑beverage management.
• Ability to support the AGM and GM and deputise in their absence.
• Strong focus on cost control, waste reduction and productivity.
• Excellent interpersonal skills for guest interaction and staff leadership.
• Commitment to maintaining high standards of cleanliness, service and food quality.
