Senior Pastry Sous Chef – Cakes

About the role

We are looking for a creative and hands‑on Senior Pastry Sous Chef to lead the cake and entremet program at Cafe Mary Grace. You will shape the pastry menu, maintain high quality standards, and bring a warm, approachable spirit to every creation.

Key responsibilities

• Oversee daily pastry operations with a focus on cakes and entremets production.
• Plan production schedules, optimise manpower and manage inventory.
• Develop, refine and document recipes in line with brand standards and seasonal trends.
• Ensure consistent quality, portion control and presentation across all pastry items.
• Train, mentor and coach junior pastry chefs.
• Maintain HACCP, food safety, hygiene and workplace safety compliance.
• Collaborate with the Head Chef on new product launches and operational improvements.
• Establish and enforce SOPs to sustain operational excellence.

Required profile

• 2‑3 years of experience in a Pastry Sous Chef or similar leadership role.
• Strong leadership and people‑management abilities.
• Detail‑oriented with a passion for clean, elegant finishes.
• Positive, collaborative attitude and a genuine desire to mentor others.
• Experience in a central kitchen environment is a plus.
