Assistant Manager – Fine Dining (Jaan)

Join the award‑winning team at JAAN, the Michelin‑starred restaurant within Fairmont Singapore and Swissôtel The Stamford. As Assistant Manager you will help deliver world‑class, personalized dining experiences that reflect the highest standards of luxury hospitality.

Key responsibilities

• Lead the dining room team to provide intuitive, memorable service aligned with Michelin‑star expectations.
• Maintain compliance with LQA standards, Accor luxury service culture and restaurant service rituals.
• Build strong relationships with returning guests, VIPs and loyalty members.
• Oversee daily restaurant operations, reservations, staffing deployment and outlet readiness.
• Collaborate with Culinary and Sommelier teams to ensure seamless guest journeys.
• Uphold presentation, cleanliness, food safety and operational excellence.
• Conduct briefings, coaching sessions and ongoing service training.
• Monitor labour productivity, operating costs and revenue to achieve financial targets.
• Support menu engineering, upselling initiatives and analyse guest feedback for continuous improvement.
• Coach, mentor and develop service professionals, fostering a culture of accountability and teamwork.

Required profile

• Diploma or Degree in Hospitality Management or a related field.
• Minimum 2 years of leadership experience in fine‑dining, luxury restaurant or upscale hotel environments.
• Experience in a Michelin‑starred or award‑winning hospitality setting is highly preferred.
• Passion for delivering exceptional guest experiences and luxury service standards.
• Strong leadership, coaching and team‑development capabilities.
• Excellent communication and interpersonal skills.
