Chef de Cuisine – Italian Restaurant

About the role

The Chef de Cuisine will lead the culinary team at Fiamma Restaurant, creating and refining Italian menus while ensuring exceptional food quality and guest experience. This senior role combines creative menu development with rigorous cost and operational control.

Key responsibilities

• Develop and execute seasonal Italian menus that align with the restaurant’s concept and Capella standards.
• Manage daily kitchen operations, including mise‑en‑place, equipment maintenance, and supply ordering.
• Control food costs through accurate recipe costing, pricing, and waste management.
• Collaborate with the Director of Culinary and Marketing to promote new dishes and special events.
• Maintain food safety and sanitation standards, conducting regular inspections.
• Lead, train, and develop kitchen staff, fostering a high‑performance team.
• Monitor sales performance, adjust menus based on guest feedback and ingredient availability.
• Prepare budgets, forecasts, and profitability reports for the restaurant.

Required profile

• Minimum 5 years of experience as a Chef de Cuisine or similar role, specializing in Italian cuisine.
• Previous experience in World’s Best 50 or Michelin‑starred restaurants.
• Proven ability to manage and motivate a kitchen team.
• Strong understanding of cost control, budgeting, and menu pricing.
• Excellent organizational skills and attention to detail.
