Cost Controller - F&B

About the role

A Sofitel luxury hotel in central Singapore is looking for a Cost Controller to manage food and beverage costs, from recipe costing and menu pricing to inventory control and cost reporting. The role works closely with the F&B department and supports the hotel's convention and event facilities.

Key responsibilities

• Ensure accurate menu costing and pricing of new menus, evaluate standard recipes and their potential cost, and cost recipes, inter-kitchen transfers and food and beverage used by hotel ambassadors.
• Work with F&B on menu costing, pricing, testing, planning and auditing.
• Establish par stock for F&B outlets and the beverage store, check market lists, receiving records and costing lists, and perform physical counts of beverage stocks.
• Record and reconcile month-end inventory with the general ledger, document inventory movements, and oversee the Receiving and Store Officer to follow control policies.
• Keep proper inventory records and suggest improvements to cost control procedures.
• Prepare weekly and monthly cost reports and advise management on F&B revenue and cost control.
• Review F&B sales against production, check guest checks are priced correctly, and audit detailed sales information.
• Perform daily and monthly F&B reconciliations using POS reports and explain discrepancies.
• Take part in the procurement system conversion and act as needed for the EAM-F&B, Director of F&B and Director of Culinary.

Required profile

• At least 4 years' experience in finance, with 5-star luxury environments preferred.
• Professional image, good interpersonal skills and strong attention to detail.
• Ability to handle stress and a willingness to develop further.

Required skills

• Intermediate to advanced Microsoft Office.
• Organisational and time management skills.
• Experience preparing, writing and proofing advertising copy.
