Restaurant Manager – 1887 by André

About the role

The Restaurant Manager will support the Restaurant General Manager in overseeing all aspects of operations and service standards at 1887 by André, a heritage gastronomy restaurant within Raffles Hotel Singapore. Acting as the face of the venue, you will ensure an exceptional dining experience that aligns with the restaurant’s historic concept and financial objectives.

Key responsibilities

• Assist the General Manager in supervising daily restaurant operations and service delivery.
• Step in as acting manager during the General Manager’s absence, representing the restaurant to guests and staff.
• Drive revenue growth, meet financial targets, and uphold quality standards.
• Manage staffing levels, recruit, and develop team members.
• Lead marketing initiatives and promote the restaurant as a premier F&B destination.
• Execute project management tasks, including equipment research, supplier sourcing, contract negotiation, and quality control.
• Develop and maintain a Colleague Welcome Kit in partnership with People & Culture.
• Design, update, and deliver service sequence guidelines and training manuals.

Required profile

• Proven experience in restaurant or hospitality management, preferably in a fine‑dining environment.
• Strong leadership and communication abilities to act as the venue’s ambassador.
• Ability to manage budgets, optimise operations, and achieve financial goals.
• Excellent organisational skills for project coordination and staff development.
