Chef – Traditional Indian Cuisine

About the role

We are looking for a skilled Chef to lead the preparation of high‑quality traditional Indian dishes at our restaurant in Little India, Singapore. The role focuses on authentic South and North Indian cuisine, ensuring fresh, flavorful meals that meet our high standards.

Key responsibilities

• Prepare and cook authentic South Indian dishes and traditional North Indian meals using a deep knowledge of herbs, spices and regional techniques.
• Oversee daily kitchen operations, supervise and coach junior kitchen staff.
• Plan and organize ingredients for next‑day preparation and upcoming orders.
• Introduce new dishes and menu items based on customer preferences.
• Monitor stock levels, inventory rotation and waste control to maintain cost efficiency.
• Ensure all food is freshly prepared and complies with quality and safety standards.

Required profile

• Proven experience in preparing Kerala cuisine and North Indian dishes.
• Ability to work under pressure during busy periods and adapt to split‑shift schedules.
• Strong understanding of the properties and usage of herbs and spices.
• Attention to detail in portion control and waste management.

Required skills

• Expertise in South Indian (Kerala) culinary techniques.
• Knowledge of North Indian traditional cooking methods.
• Ingredient planning and inventory management.
• Team leadership and staff coaching.
