Assistant Head Chef – Indian Cuisine

About the role

We are seeking an experienced Assistant Head Chef to support the Head Chef in running our authentic Indian restaurant. The role involves overseeing daily kitchen operations, ensuring high standards of food quality, hygiene, and consistency while mentoring the kitchen team.

Key responsibilities

• Assist the Head Chef in managing day‑to‑day kitchen activities.
• Prepare and cook North Indian and South Indian dishes following established recipes.
• Maintain consistency in taste, portioning, and presentation.
• Supervise chefs, cooks, and kitchen assistants during service.
• Support training and mentoring of junior staff.
• Ensure compliance with food safety, hygiene, and sanitation regulations.
• Monitor food quality, freshness, and stock levels.
• Help with inventory management, stock rotation, ordering, and receiving.
• Control food waste and assist in managing kitchen costs.
• Maintain cleanliness of equipment and workstations.
• Take charge of kitchen operations in the Head Chef’s absence.

Required profile

• Minimum 3 years of experience as an Assistant Head Chef, Senior Chef, or equivalent in an Indian restaurant.
• Strong knowledge of Indian cuisine, including tandoor, curries, biryani, breads, gravies, and spice preparation.
• Ability to supervise staff and coordinate busy service periods.
• Good understanding of food hygiene, sanitation, and workplace safety.
• Experience with inventory control and food cost management is a plus.
• Positive attitude, reliable teamwork, and strong organisational skills.
