Restaurant Manager (All Day Dining)

About the role

The Restaurant Manager will lead Peppermint, the all‑day dining buffet at PARKROYAL COLLECTION Marina Bay, ensuring an exceptional guest experience and strong financial results. This full‑time, on‑site role reports to hotel leadership and works closely with the Executive Chef and other departments.

Key responsibilities

• Oversee daily buffet service for breakfast, lunch and dinner, maintaining food quality, presentation and service standards.
• Manage restaurant flow during peak periods and coordinate with banquet operations.
• Ensure compliance with Singapore Food Agency (SFA) food safety, hygiene and halal certification requirements.
• Take full P&L ownership, set revenue targets, control food and labour costs, and prepare budgets and performance reports.
• Lead, train and develop a front‑of‑house team of 15+ staff, handling rostering, performance management and coaching.
• Address guest feedback, drive service recovery and monitor satisfaction scores.
• Maintain accurate records for audits, inventory and inspections, and liaise with other hotel departments.

Required profile

• Minimum 5 years of restaurant management experience, preferably in a luxury hotel or high‑volume buffet environment.
• Proven track record of P&L ownership and financial management.
• Experience leading large front‑of‑house teams (15+ staff).
• Familiarity with LQA or equivalent service‑audit standards.
