Research Fellow / Engineer (Food Engineering)

About the role

The Singapore Institute of Technology seeks a Research Fellow/Engineer in Food Engineering to contribute to the Proteins for Singapore (P4SG) project, focusing on the structuration of algae, soybean, and mung bean proteins for high‑quality alternative protein foods.

Key responsibilities

• Explore innovative food process optimisation methods, including AI and machine‑learning techniques.
• Develop and execute methods for characterising and linking texture and structure of alternative protein foods.
• Design, execute, and interpret experiments independently.
• Collaborate with Principal Investigators and research team to meet project deliverables and progress reports.
• Author scientific papers, contribute to grant writing, and ensure compliance with safety regulations.
• Coordinate procurement, liaise with vendors, and manage junior researchers and students.

Required profile

• PhD or advanced degree in food engineering, chemical engineering, or a related field.
• Strong analytical, critical‑thinking, and technical writing skills.
• Ability to work independently and lead a team of junior researchers.
• Proactive attitude with ownership of work.

Required skills

• Food process optimisation, AI and machine‑learning applications.
• Extrusion technology and high‑moisture extrusion.
• Texture analysis, rheology, and structural analysis of protein foods.
• Mathematical modelling and material formulation.
