Assistant Manager – Grand Lobby

About the role

The Assistant Manager will support the Restaurant Manager in overseeing the daily operations of The Grand Lobby, the iconic restaurant at Raffles Hotel Singapore. This role ensures that food, beverage and service standards consistently exceed guest expectations while contributing to revenue growth.

Key responsibilities

• Assist in forecasting sales, cover, and payroll costs and ensure appropriate staffing levels.
• Supervise daily restaurant operations, assigning tasks to supervisors and team members.
• Maintain quality and consistency of food, beverage, and service in line with hotel standards.
• Act as point of contact in the manager’s absence, attend briefings and update policies.
• Possess in‑depth knowledge of all menus, bar and wine operations, and presentation standards.
• Develop and execute sales techniques and marketing plans to maximise revenue.
• Ensure cleanliness and appearance of the restaurant and related areas at all times.
• Utilise hotel systems such as Micros, Avero and Material Control for operational control.
• Be present on the floor during all meal periods and proactively engage with guests to gather feedback and promote sales.

Required profile

• Proven experience supervising food and beverage operations in a hotel or upscale restaurant.
• Strong knowledge of menu, bar and wine service standards.
• Ability to manage staffing, payroll and cost controls.
• Familiarity with hospitality software systems.
• Willingness to work on‑site and be present throughout service periods.
