About the role

Raffles Hotel Singapore, a historic 19th-century hotel, hosts 1887 by André, a heritage gastronomy restaurant led by chef André Chiang. It is an intimate 42-seat venue serving a menu inspired by Raffles' early dining rooms and a curated beverage programme. The Assistant Restaurant Manager assists the Restaurant Manager in supervising the outlet's operations and service standards so that guests' dining expectations are met and exceeded.

Key responsibilities

• Supervise daily operations, ensure adequate manning and assign supervisors tasks suited to their strengths
• Maintain high standards of food, beverage and service, and act in the manager's absence at briefings and meetings
• Know the menus, bar and wine operations, and apply sales techniques and marketing plans
• Keep the restaurant clean and present during all meal periods, handling guest complaints swiftly
• Lead the service team, run regular team meetings, arrange exams, use performance reviews and coaching, and assist in recruitment and induction
• Ensure grooming, hygiene, fire safety and emergency procedures are followed
• Manage costs, labour and expenses, submit monthly sales analysis with an improvement plan, and use revenue management tools to generate accurate reports
• Deliver on-the-job training, guide new hires and promote the "We Are All Butlers" philosophy of personalised service
