Junior Sous Chef / Chef de Partie (Cold Production)

About the role

Raffles Hotel Singapore, a historic 19th-century hotel, is hiring a Junior Sous Chef / Chef de Partie for Cold Production. The Chef de Partie supervises the assigned kitchen to maintain the highest standards of food quality and guest satisfaction, covering quality and cost control and the training and leadership of colleagues.

Key responsibilities

• Monitor food quality and consistency, supervise kitchen operations, work with yield testing and product identification, and follow written guidelines for rotation and labelling.
• Spot-check daily food orders, work with receiving and storeroom to ensure goods meet hotel specifications, and keep perishables fresh and within their expiry dates.
• Control portioning, serving and requisitions in line with Standard Operating Procedures, update menu recipe costing and menu planning, and support F&B promotions.
• Enforce cleanliness and hygiene in kitchens and equipment, and prevent the use of spoiled or contaminated products.
• Induct and onboard new hires, train colleagues on rules, safety, hygiene, HACCP standards and emergency procedures, and manage the conduct of subordinates.
• Ensure deadlines set by supervisors are met, keep communication smooth between kitchens and other departments, and improve products through guest feedback.

Required profile

• Minimum Professional Certificate in a culinary-related field.
• At least 3 years of experience in the Food & Beverage industry (hotel and independent restaurant) in a similar position, preferably in a reputable establishment or celebrity chef restaurant.
• Proficient written and spoken English, good interpersonal, presentation and influencing skills, and a service-oriented, detail-focused approach.
• Flexible, able to work independently and self-motivated.
