Pastry Chef de Partie (1887 by André)

About the role

Raffles Hotel Singapore's 1887 by André restaurant, led by chef André Chiang, is a heritage gastronomy restaurant in an intimate 42-seat setting. It is looking for a Pastry Chef de Partie to supervise the assigned kitchen's operation and maintain the highest standards of food quality and guest satisfaction. The role covers food quality, cost control, hygiene and sanitation, and the training and development of the culinary team.

Key responsibilities

• Monitor food quality and consistency, and supervise kitchen operations including yield testing, product identification and rotation and labelling of food produce
• Carry out daily spot checks of food items ordered by the kitchen and work with receiving and storeroom to ensure goods meet hotel specifications
• Control portioning, serving, requisitions and receiving to minimise wastage, and update menu recipe costing and menu planning for promotions
• Enforce high standards of cleanliness and sanitation in kitchens and storage, keep perishables fresh and within expiry dates, and prevent the use of spoiled or contaminated products
• Induct and onboard new hires, train colleagues on hotel rules, workplace safety, hygiene, HACCP standards and emergency procedures, and ensure deadlines are met
• Maintain good relationships with colleagues, supervisors and managers, gather guest feedback to improve products, and follow sustainable practices

Required profile

• Minimum professional certificate in a culinary-related field
• At least 3 years of relevant experience in the food and beverage industry (hotel and independent restaurant) in a similar position, preferably in a reputable establishment or celebrity chef restaurant
• Proficiency in written and spoken English
• Good interpersonal, presentation and influencing skills, and the ability to work independently and adapt to change
