Sommelier - 1887 by André, Raffles Hotel Singapore

About the role

Raffles Hotel Singapore, a historic 19th-century hotel, houses 1887 by André, a heritage gastronomy restaurant led by chef André Chiang. The Sommelier delivers friendly and efficient wine service that meets guest expectations and assists the Head Sommelier in daily operations. The restaurant has an intimate 42-seat setting and a curated beverage programme pairing old- and new-world wines with bespoke alcohol-free creations.

Key responsibilities

• Offer wine options, give wine advice and take wine orders accurately and on time.
• Serve wine correctly (condition, glassware, temperature) and provide aperitifs, upsell by the glass and bottle, and after-meal service.
• Greet and farewell guests courteously, use their names when appropriate and adjust service to special requests, following a Heartist approach.
• Work as part of the Food & Beverage service team, including mise-en-place, picking up wine stock from store by par stock and arranging wine cellars.
• Coordinate with the Culinary, Catering Sales and Service teams, and perform other duties assigned by the Head of Department.
• Ensure NEA rules and Accor values are met, and contribute to corporate social responsibility and sustainability.
• Take part in training to improve wine knowledge and follow the colleague handbook and emergency procedures.

Required profile

• Certificate or diploma in hospitality or a related field.
• Certificate in wine or equivalent (e.g. Court of Master Sommeliers, WSET Level 3).
• 1 to 2 years in a wine service position or similar operations, with service or retail experience.
• Wine, beverage and food knowledge, interpersonal and communication skills, and proficiency in written and spoken English.
• Reliable, well-groomed in line with Raffles Hotel Singapore standards, enthusiastic and team-oriented.
